Choose your spices. This is your chance to simplify your everyday cooking by only opening one container of spice instead or many. Pick your most frequently used spices. My first masala dabba contains: Cumin Seeds, Mustard Seeds, Turmeric, Kashmiri Chili Powder, Garam Masala, Methi Dana (Fenugreek seeds), Ajmo (carom seeds), Bay leaves, with a few whole cardamom pods, cinnamon sticks, and cloves thrown on top of the methi dana for easy access.
Refill as needed. The beauty of the dabba is that it allows you to storel small quantities of spices in an easily accessible format while keeping the rest fresh in storage.
Storage: Store your dabba in an easy to access location so you can grab it easily while cooking. Store your extra refilling spices in air tight containers in a cool, dry location to maintain their freshness.

Modern Adaptations
