About Black Tuscan Kale

Black Tuscan kale, also known as Lacinato or Dinosaur kale, is grown for its long, dark blue-green leaves with a deeply textured surface. The flavor is milder and less curly than standard kale, making it especially suited to sautéed dishes, soups, and slow-cooked preparations. Leaves become tender when cooked and hold their structure well in hearty meals.

Plants tolerate cool weather and even light frost, often improving in flavor as temperatures drop. Regular harvesting of outer leaves encourages steady new growth through the season.

Why We Grow It

We grow Black Tuscan kale because it’s one of the most reliable cool-season greens for California gardens. Hardy, productive, and easy to cook with, it provides steady harvests when warm-season crops have slowed down.
