About Rajgira

Red leaf rajgira (amaranth) is a fast-growing warm-season green valued for its soft leaves and vibrant color. Known as rajgira in many Indian kitchens, the tender red leaves cook down quickly into bhaji, dal preparations like thotakura pappu, and South Indian-style poriyal or keerai dishes. Unlike many leafy vegetables, amaranth thrives in heat, continuing to produce when cooler greens slow down.

The Hu Hsien variety is grown primarily for leaf harvest, producing upright plants with lush foliage that can be cut repeatedly through the season.
